2 tins white beans, washed.
1/2 cup blanched almonds + extra for garnish
1 clove of garlic
Red Island extra virgin olive oil
1/2 tsp salt
Juice of 1/2 lemon sumac
Fresh radishes
In medium pot bring the beans, garlic and almonds to the boil in lightly salted water. Boil rapidly for ten minutes.
Drain off the beans and almonds reserving a little of the cooking water. Add the mix to a food processor and process and high for 5-6 minutes. Adjust the consistency of the mixture with a tsp each at a time of Red Island extra virgin olive oil and reserved cooking water. Scrape the side of the processor from time to time. Season to taste with salt and lemon juice.
Serve on a dish with a dusting of sumac, Red Island extra virgin olive oil, almonds and radishes.
