Full of punchy flavours and healthy fats this dish is a great midweek dinner ready in under 30 minutes.
1kg side of salmon, pin boned and skin off
60g honey
60ml lime juice
30ml fish sauce
3 dried long red chilli, roughly chopped
4 cloves garlic, finely sliced
2 bunches Chinese broccoli, woody stems removed
2 tsp sesame seeds
Preheat oven to 180 degrees Celsius, fan forced.
Place your salmon onto a roasting tray before covering in lime juice, honey and fish sauce and gently turning the salmon to completely cover and marinate in the dressing. Evenly cover the salmon in the chopped chilli and garlic slices before placing into the oven and cooking for 20-25 minutes or until cooked to your liking. Allow the salmon to rest for 4-5 minutes before serving.
Meanwhile preheat a large frying pan over high heat for 3-4 minutes before adding a drizzle of olive oil and sautéing the Chinese broccoli. Cook the broccoli for 4-5 minutes until it begins to char and is tender, you do not want to cook it until it is completely soft. Just before removing from the heat add the sesame seeds and a pinch of salt. Serve alongside the salmon.
