1 saddle of Mutton, flank still attached
2 tsp sea salt flakes
2 tbsp. extra virgin olive oil
1 bunch of red chicory to serve, washed and stems trimmed
Preheat oven to 180 degrees Celsius fan forced.
Heat a large oven proof dish over medium heat on the stove and allow to come to temperature for 3-4 minutes, Season the mutton with salt and olive before sealing in the preheated pan until golden brown, 7-8 minutes. Before placing the saddle into the oven be sure to tuck the flanks under the cut of meat. cook for 40-45 minutes or until the internal temperature is 46-48 degrees Celsius when probed. Allow to rest for 10 minutes before serving, this will cook the meat to a medium rare.
Serve the Mutton with red chicory simply dressed in extra virgin olive oil.
