400g veal mince
400g pork mince
2 1/2 cups bread crumbs
2 eggs, lightly beaten
1/3 cup Red Island extra virgin olive oil
1 cup of parsley, roughly chopped
2 cups grated parmesan
2 tbsp Worcestershire sauce
2 tbsp tomato sauce
2 tsp each of salt and white pepper
Preheat oven to 180 degrees Celsius.
In a large mixing bowl add all the ingredients and mix well using your hands until everything is completely combined. Transfer to a greased and lined loaf tin and press in firmly and smooth the top down. Place into oven and cook for 1 hour. Remove from oven and drain off excess juices before removing from loaf tin and serving.
Note
For a shine exterior, once the meatloaf is cooked, carefully pop it out of the loaf tin and onto a lined baking tray before glazing in brown sauce and popping back into the oven for ten minutes.
