A great snack to make on a Sunday to have on hand through the coming week for a healthy guilt free treat.
500g dates, pureed
100g raw macadamia nuts, chopped
60g coconut oil
40g chocolate protein powder
40g raw Australian honey
1/2 cup shredded coconut
Pour the shredded coconut into a large tray and set aside.
Place all of the ingredients into a large mixing bowl and combine thoroughly using a spatula. This may take 5-6 minutes – you want an even mixing of all the ingredients.
Ball the mixture using your hands and place them into the tray with shredded coconut. I just say make them as big as a large strawberry however, if you wanted to weigh them 30-40g is a good size. I lightly oil my hands before starting to make balls as the date puree is extremely sticky and can make a big mess. Once all the mixture has been balled gently roll them in the shredded coconut to cover the outside completely and place into an airtight container and keep in the fridge for up to 1 week.
